Around 150 balloons launch above Göreme on a clear morning — more than anywhere on earth. Pickup is in the dark; the burner thumps on; the valley fills with colour as the sun comes up over the rim. The chimneys, the cones, the pigeon caves — all of it reads different from a thousand feet up.

Eighty metres down
Derinkuyu and Kaymakli
Byzantine Christians hid from invading armies by cutting cities into the volcanic rock. Eight levels deep. Ventilation shafts. Churches, kitchens, stables, wineries, schools. Up to twenty thousand people lived underground for months at a time. Two of the cities are still walkable today.

The tuff is soft when fresh, then sets harder than concrete. Early Christians used it to carve hundreds of churches — frescoes still on the ceilings a thousand years later. Modern owners use it to carve hotels. You sleep in the same rock the monks prayed in.
